Mexican Rice Recipe

Nothing rounds out a Mexican meal like spanish rice and it’s easy to make. You can use either fresh ingredients as outlined below or if you’re in a hurry or don’t have the ingredients listed below you can substitute all the fresh ingredients with about 3 tablespoons of salsa and get great results as well. The trickiest part is toasting the rice. Don’t go too long or the rice will come out hard or tasting burnt.

Mexican Rice


  • 1 cup white rice
  • 1 tablespoon butter
  • 2 tablespoons tomato (finely chopped)
  • 2 tablespoons onion (finely chopped)
  • 2 tablespoons cilantro (finely chopped)
  • 1 tablespoon cumin powder
  • 2 cups water


Step 1
Combine chopped tomato, onion, cilantro and cumin in a two cup container then fill the container with water.
Step 2
Spanish Rice
Put butter in a medium saucepan over medium heat. Add the rice after the butter starts to melt. Cook on medium heat until the rice starts to toast.
Step 3
Give the water mix a quick stir so none of the ingredients are sticking on the bottom and pour the mixture into the rice. Add the pureed tomato. Stir the mixture once or twice and then let it cook until it starts to boil.
Step 4
Cover the sauce pan and turn to low heat. Cook covered for fifteen minutes. Once it's done, fluff the rice with a fork and serve.
