King Pulled Pork Sandwich

King Pulled Pork Sandwich

This sandwich is the King for anyone that loves BBQ. The golden crown of cole slaw over slow smoked pulled pork and BBQ sauce will leave your fingers sticky, your face covered in sauce and your taste buds singing. Smoking a pork butt is time intensive, but not difficult. Because of the time involved in smoking I usually do a big batch at at time which leaves me with a lot of meat to get through. The King Pulled Pork Sandwich is one of the things we really look forward to after smoking because the pork is easy to freeze and reheat in small batches without losing too much taste, which makes it prime for sandwiches.

The sandwich gets it’s name from the golden crown of cole slaw and the fact that this is a hard sandwich to beat in the taste department. In the recipe for the cole slaw I omitted one of my favorite ingredients, chipotle powder. This gives it some spice to kick things up a notch, but I recognize that not everyone wants that kind of heat with their sandwich.

Another nice touch is to lightly toast the hamburger buns with a little butter in the broiler before assembling the sandwiches. The toasting will help the bun hold up a little bit better against all the sauce.

The King of sandwiches, the King Pulled Pork sandwich is a wonderfully messy and tasty treat.

  • 3lb Smoked Pork Butt
  • 3 cups Shredded Cabbage
  • 1/2 cup Shredded Carrot
  • 1 teaspoon Apple Vinegar
  • 1/3 cup sugar
  • 1/2 teaspoon mustard powder
  • 1/2 cup mayonaise
  • 1/2 teaspoon Turmeric
  • 1/2 teaspoon Black Pepper
  • 8 Large Hamburger Buns

Step 1
Mix the cabbage, mayonnaise, vinegar, mustard powder, sugar, turmeric, pepper and salt to taste in a bowl to make the cole slaw. It should come out a slightly golden color. Set it aside to let the ingredients mix a little bit.
Step 2
Shred the pork butt. If it's been cooked right the easiest way to shred it is to pull off a chunk and just mash it with your palm against the counter.
Step 3
Put some pulled pork on the bottom bun. Add 1-2 tablespoons of your favorite BBQ sauce over the pork. Add a generous amount of cole slaw to "crown" your pork. Put the top bun in place and enjoy.
